Lemon Balm, Melissa officinalis, has Aromatic, culinary, and medicinal uses. White or yellow blooms in summer and fall. Grows 2’. Lemon balm is a loosely branched upright perennial valued for its lemony scent and taste. Its flavor can be described as lightly lemon with a suggestion of mint. A longtime favorite of beekeepers and honeybees. The leaves make a mild, soothing tea and can be used fresh in salads and marinades. It teams well with broccoli, asparagus, lamb, shellfish, olives and beans. Lemon balm needs and average well-drained soil. It grows best in full sunlight but also survives in the shade.
