Fennel, Foeniculum vulgare, has culinary, ornamental, and medicinal uses. Yellow flowers in late summer and early fall. Grows 4’. Fennel is native to the Mediterranean region. It is a semi-hardy perennial that is cultivated as an annual. Its filigreed leaves and stunning flat heads of small flowers make it a showstopper in any landscape— especially the bronze varieties. It stands tall to make a good back of the border plant. This herb is a must for the butterfly enthusiast. It is a host plant for black swallowtails, plant several to provide food for the bright green and black caterpillars. Each part of the fennel plant is edible and its flavor resembles anise or licorice. Use fresh leaves in salads and as a lacy garnish. The tender stems are eaten like celery. As a seasoning, its flavor blends particularly well with fish, vegetable dips, cream sauces, herb butters and cheese spreads. Grow fennel in average, well-drained soil in full sun.
